Easy Green Beans with Mushrooms Stir-fry

Ingredients required to prepare Green Beans with Mushrooms
- Fresh green beans are the best. If unavailable, you can use frozen green beans, but they may be less crisp-tender than fresh beans. I use light soy sauce as the main seasoning ingredient in this recipe.
- I always use fresh button mushrooms. Depending on your preference, you can use portobello or any mushrooms. To make it even more Asian, consider substituting it with dried shiitake mushrooms.
- Garlic is an essential ingredient that provides a delightful aroma. It pairs very well with green beans and other ingredients. I also added some sliced onions for additional flavor and crunchiness.
- I use a simple salt, black pepper, and light soy sauce seasoning for an Asian twist.
Note: Haricot verts are a French variety of green beans. Sometimes, they are sold as “French green beans.”
Step to prepare the Green Beans with Mushrooms
1. Start by trimming the ends of the green beans (also called string beans). If they are too long, cut them into two.
2. Then, boil a pot of water and add one tablespoon of salt for every liter. Put the green beans in the boiling water and cook until crisp-tender, which should take two to seven minutes, depending on their size. The green beans I use are small and take about three minutes to become crisp-tender.
3. Once done, remove the green beans from the boiling water and immediately submerge them in cold water to stop cooking. Remove the cold water with a colander. Cut the mushrooms into thick slices and the bacon into small cubes.
4. Heat olive oil in a large skillet or nonstick pan. Sauté the bacon until crispy. Remove the bacon, but keep the remaining oil in the pan.
5. Sauté the sliced onions until they become transparent. Halfway through, add the chopped garlic and continue sautéing.
Add the sliced mushrooms. Mix all the ingredients thoroughly, and sauté over medium heat for one to two minutes. Season with salt, light soy sauce, and ground black pepper.
6. Finally, return the blanched green beans and bacon to the pan and stir-fry for about half a minute over medium-high heat. Transfer to a plate to serve as a side dish.
Tips and variations to prepare Green Beans with Mushrooms
- There are two methods we can use to cook the green beans. The first method is to blanch the green beans, which I did. The second method is to sauté them straight away in the skillet. I chose to blanch the green beans today to preserve their vibrant color. If I sauté the green beans, the color will be slightly dull and less vibrant. However, sautéing the green beans can create a more aromatic flavor. Since I used bacon in the recipe, I fried the bacon until slightly crispy, which provided a lot of flavor, and therefore, I could do it without sautéing the green beans.
- If you want to make the dish healthier, consider skipping the bacon. However, consuming processed foods like bacon occasionally is acceptable. Therefore, I would like to treat myself more and include the bacon in the recipe.
- Include balsamic vinegar and sugar in the seasoning for a different taste profile.
- You can make many variations on this recipe. For example, you can add some small diced tomatoes to it. Another option is to add some Camembert or feta cheese.
Storage
Please store the leftovers in an airtight container in the refrigerator. They should be good for up to two days. When you want to reheat, use the microwave or do a quick sauté on the stovetop before serving.
